Regarded as the birthplace of corn - the state of Puebla has produced many of the classic food of the country, including the Mole Poblano, prepared with more than 30 ingredients including spices, nuts and seeds, until chocolate. Other typical food originating in this area are the Ting (pork or chicken cooked with peppers) rabbit with spices, sheep or chicken wrapped and cooked in a sauce, Chiles en Nogada (poblano chiles stuffed with ground beef with raisins and walnuts and bathed in a peanut sauce with pomegranate seeds). Be sure to try the blue tortillas made from corn that local color.
